Mom's Creamy Carbonara Recipe



We're down to the last month of year 2015 which means, Christmas is just around the corner! What I'm sharing to you is the recipe of my mom's carbonara which has been a hit for Christmas party potlucks since 2010. Hope you guys like it, too! Disclaimer: we actually got this recipe from our dearest Sister Lut, my parents' nun friend, who used to cook this for us whenever we visited her. Now that she couldn't cook anymore since she might just tire herself, she passed on this recipe to us.


Mom's Creamy Carbonara

Makes 4-5 servings

WHAT YOU NEED




  • 250g penne pasta
  • 6 strips of bacon
  • 1/2 cup white onion
  • small canned mushrooms, pieces and stems (we used Jolly)
  • 1 can of mushroom soup (we used Campbell's)
  • 1 cup of water
  • 1 pack (250mL) of Nestle all-purpose cream
  • 1/2 cup grated cheese (we used Eden)
  • salt and pepper to taste
  • butter for frying (we used Anchor)


WHAT TO DO
1. Cook pasta as per package instruction. Once cooked, drain and set aside.
2. For the the white sauce: heat pan to medium heat and melt butter. Add bacon and fry until brown.
3. Add onions, cook until transparent. Stir in mushrooms and cook for 1-2 minutes.
4. Add in mushroom soup and water. Afterwards, simmer for 1 minute.
5. Mix in all-purpose cream and cheese. Continue to simmer for another 2-3 minutes.
6. Add salt and pepper to taste.
7. Once your white sauce is done, stir in you pasta and you're done!
