Red Velvet Cupcakes with Cream Cheese Frosting
Makes 12 cupcakes
WHAT YOU NEED
For cupcakes:
1 1/4 cups all purpose flour
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 tablespoon cocoa powder
1/2 cup buttermilk
1 egg
1/2 tablespoon vinegar
3/4 cup vegetable oil
1 oz red food color
For cream cheese frosting:
1/2 bar cream cheese
1/4 + 1/16 cup unsalted butter
1/16 cup shortening
2 cups confectioner's sugar
1/2 tsp vanilla
WHAT TO DO
1. Pre-heat your oven to 275℉.2. Measure and sift the dry ingredients.

4. Combine the dry and wet ingredients.
5. Line you cupcake tray and scoop in the batter. Fill each container only 3/4 of the way to accommodate the rising of the batter.

6. Bake for 15-20 minutes. Stick a toothpick into the cupcakes; if the toothpick comes out clean, then the cupcakes are done.
7. Let the cupcakes cool before adding frosting.
8. Cream the cheese, butter and shortening, then mix in confectioner's sugar 1 cup at a time. Add vanilla.
