What I'll be sharing here is a simple and an easy banana bread recipe which is from my mom's high school best friend. You can make this if family occasions or gatherings require "potluck", you can also give this to others as a gift, or bake it if you're just craving! My mom and I tried it as soon as we held hands on to this recipe and it became an instant hit to the family! It may take a little while before you can eat it but it's definitely worth the try.
Chocolate Chip Banana Bread
Cooking Time: 65 to 90 minutes

WHAT YOU NEED:
• 1/2 cup butter (This is equal to a stick of butter)
• 1 cup white sugar
• 1 egg
• 1 tablespoon mayonnaise (Yup, you read it right! This is the secret to make the banana bread moist.)
• 3 very ripe Lakatan bananas, mashed
• 1 1/2 cups all purpose flour
• 1/4 teaspoon salt
• 1/2 teaspoon baking powder
• 1 teaspoon baking soda
• 1/2 cup semi-sweet chocolate chips
• 1/4 cup chopped walnuts (This is optional but I recommend to add it because it compliments and adds texture to the bread.)
• 1 large bowl
• 1 regular bowl
• 9x5 loaf pan
NOTE: If you don't have baking soda in your pantry, or you find a huge box of it in the grocery which is too much if you just need a teaspoon, you can adjust the recipe. Scrap the baking soda and the salt from the recipe, then make the baking powder 2 1/2 teaspoons, instead of 1/2 teaspoon.
WHAT TO DO:
1. Preheat oven to 350ºF or 175ºC.
2. Lightly grease the 9x5 inch loaf pan.
3. In the large bowl, cream together the butter and sugar until light and fluffy.
4. Stir in the egg and beat well.
5. Stir in the mayonnaise and bananas.
6. In the regular bowl, stir together the flour, salt, baking powder and baking soda. (Or if you don’t have baking soda, just stir together flour and baking powder.)
7. Blend the flour mixture into the banana mixture; stir just enough to combine all of the ingredients. REMEMBER: Don’t over-mix the batter as it might make the bread dry.
8. Fold in the chocolate chips and walnuts.
9. Bake for 50-75 minutes until a toothpick inserted into the center of the loaf comes out clean.
10. Cool in pan for 20 minutes. Enjoy!
